Lake Granby, located approximately 86 miles from Denver on US Hwy 40, is the second largest lake in Colorado. Often overlooked as a destination it combines memorable fishing with breathtakingly scenic backdrop and easy access to the western side of the Rocky Mountain National Park. Travelers will find it a convenient location set between Winter Park with it's ski/mountain biking and Grand Lake.

1. Fry several strips of your favorite bacon in a skillet.
2. Remove and drain on paper toweling.
3. Salt and pepper trout filets to taste, squirting with lemon juice from one half of a fresh lemon.
4. Place filets in bacon drippings and cook approximately 2-3 minutes per side, on medium heat. Note that thicker filets may need to cook longer.
5. Remove filets from pan and thinly slice other lemon half and place on top of filet for garnish.
